Chicken Salad and Pinot Blanc

After the roast come the salads. This was chicken with bacon on a bed of spinach leaves – quite strong tastes, but still a salad.

Having run out of Pinot Gris, I fell back on some Pinot Blanc, which I would normally expect to be a little soft for this dish, but I had a Pinot Blanc Hugel 2005 that I had bought for just £6.09 and needed to be drunk before it got too old. It was indeed fully mature and certainly softening, but it retained considerable intensity and some spice – Pinot Blanc is not famous for its spiciness. Actually it worked very well, the intensity making up for the softness and low-level spice. It just shows how versatile theseAlsace whites are, though this is one for Pinot Gris if you have it.
